This RVer's New Year Resolution - Your Money or Your Life

As fulltime RVers, my husband and I live unconventional lives but even so, the conditional pull of New Year’s resolutions can’t be denied. Often these annual goals include a financial mention: save more, earn more, trim the budget, track spending, make wise money decisions. Good for us, everyone – regardless of our situation – needs money to live. Some of us have unlimited resources but most are living on either retirement budgets or are still in the job market.

Years ago, before we hit the road, I stumbled upon a book that changed the way I see my relationship with money. In fact, one concept in the book propelled my husband and me to sell almost all of our possessions including our floating home, quit our jobs and embark upon our journey of a lifetime.

The Concept That Rocked My World

That book was Your Money or Your Life by Joe Dominguez and Vicki Robin and the concept that stopped me in my tracks was on page 54: money is something we choose to trade our life energy for. Dominguez and Robin point out the obvious – life is finite, we only have so much time on earth. The big idea is the trade we make in life energy (time left) for the things we spend our money on. Every single spending decision we make costs something in life energy.

The "trading my life" idea stops me in my tracks. Based on average life expectancy tables I have 333,100 hours left on this earth. Dominguez and Robin assume we spend half of our lives taking care of ourselves – sleeping, bathing, exercising, etc. That means that if I live an average life span I have 166,550 hours left to devote to living. How I spend those hours is under my complete control.

The Concept in Practice

So how exactly can you determine the value of your life energy as it relates to money? For demonstration purposes, let’s say you make/made $25 per hour. That dinner out or bauble you simply must have costs $50. So, logically, you’d calculate that it took two hours of life energy (finite time left on this earth) to earn enough to purchase that experience or item. Right? Not so fast.

On it’s face that’s a reliable equation but the book urges you to dig deeper. Upon further examination, your wage is not exactly as it seems. Sure, you make/made $25 per hour but what expenses were associated with making that hourly? How much does/did it cost in fuel, vehicle maintenance, parking, clothing and personal care items such as aftershave, hair gel, and makeup required for your professional appearance, coffee and snack breaks, lunch, and other expenses associated with working. Let’s assume your total expenses divided by the number of working hours equaled $12 per hour. That means your “real hourly wage” is $13 per hour and in the scheme of things that $50 expense cost you almost four hours of your life. I repeat: four hours of your life.

Everything’s value and worth is an individual’s call. Exchanging life energy for things we need or want is a personal prerogative. I’ve got to have vehicle insurance and happen to like upscale RV resorts and high-end ingredients and tools in my RV kitchen. With this formula, I know exactly how much of my life I’m trading for these necessities or niceties and make an informed choice when I compare insurance plans, book a stay or go grocery shopping.

I’m less inclined to make rash purchases, pick up random trinkets or invest in items that don’t support my home or RV travel style. It’s simply not worth my life energy.

Fulfillment and the American Dream

While written as a financial advice book, chapter 4, “How Much is Enough? The Nature of Fulfillment”, resonates with the way I live. When is enough enough? Are we willing to trade our life energy for more? Do we work hard just keep up with the Jones?

For me, it all boils down to a question of value. Is a purchase, admission fee, meal out or even a campsite worth the life energy it will cost? Two of the three questions the authors pose in relation to spending “that will transform your life” remain relevant to my lifestyle:

1.    Did I receive fulfillment, satisfaction and value in proportion to life energy spent?
2.    Is this expenditure of life energy in alignment with my values and life purpose?

Chances are we’ve all returned home from a meal out and felt disappointed. I know I have. That’s why I don’t go out to dinner all that often. For the life energy I have available I’d much prefer to invite some friends over, mix up a shaker of fancy (read: very expensive out) cocktails, play some mood music, prepare a simple, delicious dinner in my RV kitchen and make an evening of it. That not only fulfills my cost/value proposition but also fuels my life purpose of connecting with others, making a difference and living my passion.

Another great example is my purchase of a new computer. It cost a heck of a lot of life energy but makes my life so much easier. The value I receive by a faster, more intuitive system and the way it helps me promote my passion makes it a fulfilling, worthy expenditure.

Your purpose, passion and even life energy situation is just that – yours and yours alone. If you give it any thought you’ll realize that consciously or unconsciously you are making value calls every time you make a purchase.

We All Make Choices

Choosing to live this RV lifestyle is a huge confirmation of how I want to spend my life energy, my passion and my life’s purpose. It’s a very public statement of who I am and what I stand for. Without a stick home I have low housing overhead. Living in a small space restricts the number of things I can carry around. Having the freedom to live where I want, when I want allows me to enjoy new environments and experiences. The fuel I purchase to move about is well worth the price…even at $5/gallon.

While I used to enjoy fancy vacations and expensive wine (who wouldn’t, really), I paid for it in life energy. I now know and accept that fact. Today I’m more satisfied than ever watching the sun set over the rugged mountain range or seashore that I happen to be closest to with a thrifty glass of wine and my sweetie by my side. Some people just can’t comprehend this but that’s okay, too. We all have to choose…so what will it be...your money or your life?

Monster Buffet Halloween Party Fun

Are you having a Halloween party and looking for something a bit out of the ordinary to entertain your guests of all ages? How about hosting a “monster buffet”…sure to satisfy monsters of all shapes and sizes. This buffet isn’t to dine on, though. Instead, it’s creepy, crawly, touchy, feely scrumptious party fun. Your guests will walk down the “buffet” line, getting a good feel of “eyeballs”, “guts”, “a shrunken head”, “snot”, and more…your imagination is the limit.

Here’s how it works:

Prepare a station of six or seven ghoulish experiences along a rectangular table or countertop. Visit the dollar store and purchase plastic pumpkin candy totes – like children use for trick or treat – one for each station. Each pumpkin will contain one “buffet” item. Consider:

Black olives = eyeballs
Cooked spaghetti coated generously with oil = guts
Small, hairy coconut = shrunken head
Cornstarch slime = snot (here's how to make snot - use green food coloring)
Baby carrots (leave out and allow to dry a bit) = fingers
Ripe mango - lightly oiled = heart
Cornmeal = ground bones
Ears = dried apricots
Large pickle end = nose
Popcorn kernels = teeth
Wet yarn = hair

Cover the top of each container so guests cannot see inside. Label each station with what’s inside (guts, eyeballs, snot, etc.). Have a few “crypt keepers” behind the table to help guests and discourage peeking.

Invite guests to walk the line, reaching into each pumpkin container and getting a good feel of the contents. Be sure to provide plenty of napkins or paper towels (and perhaps even a bucket of clean water) for guests to use to clean up at the end of the “buffet” line.

Tip: Avoid using any type of meat product or other item that may be unsanitary.

Enjoy this good clean fun…guaranteed to gross out even the most wicked monsters among us! Delish!!

Zucchini Mock Apple Pie RV-Easy Recipes

Not too long ago we toured the Norcold RV refrigerator factory in Sydney, Ohio for an upcoming RV Cooking Show episode. It was there that I met a terrific lady named Jana. We traded email addresses and not long after I arrived back at the camp I had an email from my new Norcold friend. In it Jana shared that she's been making Norcold RV refrigerators for 20 years and has worked in almost every department at one time or another. She's presently building the 1200 and 2117 models. Maybe she's had a hand in building your RV fridge!

Married 36 years, Jana has 4 daughters and 5 grandchildren. Aside from loving her life as a mom and grandmom, she loves to camp and enjoys finding ways to use the fruits of her husband Don's gardening labors. It's this last love that prompted her to send along two mouth-watering, tried and true RV easy zucchini recipes. If you have an overflowing zucchini patch excellent. If not, visit your local farmer market for a fresh crop. Either way, try them in your RV kitchen (I used my toaster oven for these)...I suspect you're going to like them!

Jana's Zucchini Mock Apple Pie

6 c zucchini peeled, cored and chunky sliced

1/4 c fresh squeezed lemon juice

1-1/4 c sugar

1-1/2 t apple pie spice

2 T minute tapioca or flour

9-inch unbaked pastry pie shell

Streusel Topping:

1/2 c brown sugar

1 c flour

1/2 c butter

In a large saucepan combine zucchini with lemon juice, sugar and apple pie spice.

Simmer over medium heat until zucchini is fork tender but not mushy (about 20 minutes).

Remove from heat and add tapioca or flour.

Pour into prepared unbaked pie shell. Sprinkle with streusel topping (combine brown sugar and flour and cut in butter until crumbly).

Bake at 350 degrees for 45 minutes or until pie is bubbly and browned.

Serves 8

Jana's Plain Ole' Zucchini Pie

3 c peeled, cored and diced zucchini

1 can evaporated milk

1-1/2 c sugar

2 t vanilla

3 T cornstarch

2 T butter

3 eggs

2 pie shells

cinnamon

Cook zucchini in slightly salted water over medium heat until tender and drain. Combine remaining ingredients in large bowl.

Add zucchini and divide into two unbaked pie shells. Sprinkle cinnamon on top. Bake at 350 degrees for 1 hour.

Each pie serves 8

Not too long ago I was fortunate enough to be able to visit with two dynamic women that play a major part in the Santa Ynez Valley culinary scene - I call them the 'oil barons'.

For this Food, Fun & Friends at Flying Flags episode called Local and Luscious I was searching for a premier olive oil maker and came across Theo Stephan, founder of Global Gardens, and her amazing gourmet collection of oils, vinegars and more. Long story short, that lead me to the Solvang Farmers Market and Mary Jane Edalatpour of La Nogalera Walnut Oil.

Both ladies are a foodie-force to be reckoned with and create some spectacular oils! In this RV Cooking Show episode we'll learn a bit about their groves and their oils and make two show-stopping dishes...one to start the meal and one to finish it.

After visiting with Theo we'll prepare an easy and elegant Baked Goat Cheese Salad with a simple vinaigrette. We'll take Mary Jane's walnut oil for a spin with our Walnut Honey Sauced Brownie after stopping by her organic walnut grove. California's Central Coast is a magical place attracting celebrities, foodies, tourists and outdoor lovers alike. Nestled in the beautiful Santa Ynez/Santa Barbara Wine Country is a perfect stop for RVers - Flying Flags RV Resort in Buellton. They asked the RV Cooking Show to come out and produce a series highlighting the area’s bounty. At first we thought wine but when we arrived we found so much more and look forward to sharing these discoveries with you in the seven sensational episodes in the Food, Fun & Friends at Flying Flags series.

This time around we’ve got some rockin’ regional BBQ to kick off Great Outdoors Month. Known as California's BBQ, Santa Maria Tri-Tip is nearly as easy as it is delicious. The RV Cooking Show is tickled to bring you this "Live at Flying Flags RV Resort" episode called Taste of Flying Flags with a bonus insider look at Enjoy Cupcakes.

With the help of local merchants and Flying Flags guests and staff we held a raffle benefiting the Santa Barbara County Food Bank (yes, there are hungry souls everywhere) and raised enough cash to provide 3,150 meals. Wow!

We’d also like to give a big shout-out to our newest partner – RV Education 101. RV Cooking Show - 3 weeks, 13 interviews, 3150 meals for the hungry - Wraps Flying Flags Series Filming

After a whirlwind three weeks of exploring interesting, off-the-beaten track attractions, shops and eateries, interviewing 13 local luminaries and raising $450 (enough to purchase 3150 meals) for the Santa Barbara County Food Bank at two live events, we wrapped filming on the Food, Fun and Friends at Flying Flags series.

There is so much to see, do and taste in the Santa Barbara/Santa Ynez Wine Country. Flying Flags RV Resort manager Dan Baumann, his staff and Buellton Visitors Bureau executive director Kathy Vreeland were able to fill our days and nights collecting a treasure trove of neat travel information that not only we RVers will be excited to experience but those interested in the area will enjoy as well. In fact, the Gourmet Guests episode with Chef Giorgio of Trattoria Grappolo was filmed in and around a well-appointed park model cottage – perfect for travelers that want to enjoy a back-to-nature resort experience without having to bring an RV or tent. Even Chef Giorgio expressed interest in bringing his family to Flying Flags and staying in a park model cottage. We filmed in Cottage 1 – a nifty loft unit.

We hosted two live event evenings – something very different for us – on Friday and Saturday, April 29th and 30th and everyone really enjoyed themselves – especially me. Resident tri-tip barbeque master Richard Boucher delivered a tri-tip cooking demonstration, passed out tri-tip samples and took questions from the audience and Enjoy Cupcakes arrived with their restored vintage Shasta Travel Trailer, talked cupcakes and handed out 72 of their fabulous chocolate syrah specialties on Friday. Guests enjoyed a potluck dinner with friends new and old, made s’mores fireside and took in an alfresco movie on Saturday. Portions of these events will air in upcoming episodes.

During the live events sensational prizes donated by generous local merchants were raffled to several lucky winners. Flying Flags staff member and raffle-ticket-seller extraordinaire Terry Boucher, with assistance from the front desk staff, collected $450 – enough to allow the Santa Barbara County Food Bank to serve 3150 meals to those that might otherwise go hungry. Without the kindheartedness of the merchants and Flying Flags guests this would not have been possible. I think we all agree, no one should go hungry in this great country of ours. The outpouring of support for the food bank benefit touched my very soul – we got so much participation and applause for the cause again and again. Thanks to the fine folks at the resort and in the valley 3150 hot, nutritious meals will feed the hungry and that makes a real difference in so many lives. Congratulations to everyone who participated. We’ll have more on this in an upcoming post.

“This has been a terrific experience – both the live portion of the RV Cooking Show/Flying Flags series and the fun we had filming. All who participated are looking forward to watching the shows as they are released this summer. And I know RVers who have not had the pleasure of visiting our resort here in California’s Central Coast will appreciate the upcoming series showcasing our special slice of paradise,” said Baumann. By the way, Dan runs a fine resort and the pride beams not only from him but his staff as well. Many have been there 5, 8, plus years! Wow.

Disney Pep Talk Great For RV Families

Mom and children's book author Eileen Wacker hits the nail on the head when it comes to planning a summer (or anytime of year for that matter of fact) vacation with kids - be it an RV vacation or another type of getaway. Have a read and see how you can work this into your family's RVing plans.

Summer Trip Pep Talk 101

Oh the sweet anticipation…

I am a mom with four kids aged 7 to 13 and I approach summer trips with trepidation. The end of the school year is arriving fast and summer vacations are around the corner. We save money all year and make sacrifices to ensure a summer trip is possible. We carve out precious “days off” from work and align everyone’s schedules, never an easy task given camps, events, activities and family commitments. So the stakes are as high as the expectations.

Reality sets in… and the Disney Pep Talk

My husband and I, first and foremost, abide by the “Disney Pep Talk” rule. Several years ago, we were visiting my brother’s family in California. They also have four children roughly the same age as ours so there is always lots of excitement when we get together. The night before we embarked on a Disneyland adventure, we received the equivalent of a pep talk from my brother as our elated children busily planned out departure times, the order of the rides and the foods they would eat, all in squealing, happy voices.

Dan said, “Watch the families tomorrow. They have saved endlessly and looked forward to this trip to Disney FOREVER. But watch, inevitably many parents get stressed and yell at their kids. And this is at Disney which is probably the most fun place in the world.” From there, my husband and I started discussing a critical parenting question: “Why do kids, at times during every vacation, refuse to have fun or be fun? Or is it us and our approach?”

Sure enough, the next day in Disney, we saw children weeping in long lines with sweaty, sunburned faces. We saw disappointed parents watching children dropping or wasting their expensive food. We saw tired, writhing kids that could not be convinced to go on a certain ride with the parents yelling, “How can you not want to go on this? It’s why we are here!” We saw other parents shout, “We are on vacation in Disney. You should be having a great time and instead you’re complaining.” And, several parents were observed getting infuriated when their little one announced 45 minutes into a wait that he/she had to go the bathroom and could not hold it any longer. So my husband and I decided to create some strategies to enjoy vacation moments because our kids, like most kids, can act ungrateful and refuse to have fun in the most wonderful places.

We now have “Disney Pep Talk” before every vacation and use the tips below.

Seven strategies for traveling families:

1) Don’t expect kids to be grateful for all the sacrifices it takes to go on a trip. They are not going to thank you profusely or act wonderfully. Instead, watch for the moment of wonder or the “pure joy” smile – it is these “moments” that make the trip happy and memorable. Photograph those moments and it is all you will remember later.

2) Leave a little give in the schedule. Most kids are not naturally continuous “do-ers” on a vacation. If you have an agenda packed end to end with activities, the kids will start complaining and wish to stay somewhere and just hang out. Think of your kids sweating in Washington DC, hiking from monument to monument in the blistering heat and waiting in the sun at the Spy Museum. All good ideas but some down time is needed for them to retain their trip enthusiasm.

3) Let each person choose one event/activity and one restaurant destination during the trip. After we select our destination (even if it is a repeat), we put out a menu of options and each child can choose one of the options or propose something else. If one child chooses swimming, we make sure we get some swimming into the vacation, whether at a hotel pool or a beach. They also get to choose one type of food that we will be sure to eat. This is a huge hit with our kids and helps us minimize complaints during the trip. Our youngest and oldest like to do very different things but each knows that their treasured turn will come.

4) Set the expectation - traveling is a nightmare. Whether by plane or car, summer vacations are filled with other people on vacation and there are inevitable delays, traffic and waiting. Have a plan for the long waits. Don’t expect the perfect trip; if everything goes swimmingly, then it is a bonus. Electronics may be your best friend during these moments.

5) Everyone has to bring a book. This is a big rule and my kids now look forward to going to the bookstore to select a special book for the trip. We have a kindle and the kids love to borrow the kindle to read. I also give extra credit for creating and writing in a journal; they can write words or draw or both. I give them $1 a page for quality journal writing. It is almost certain the kids will be asked to write something about their summer when school resumes so they are getting a head start.

6) Try to pack light and smart. This is a basic but we all continue to “overpack” and drag around things we just don’t need. So now we sit down and make a list together, then make it an event. “Okay everyone bring down three pairs of pajamas”, then “everyone go get five shirts and one has to have a collar”, etc. And they have to carry what they pack.

7) Electronics are awesome but you need to set some ground rules about usage. The ipods, phones, ipads, DSs, and other devices are amazing and really help children stay distracted during the hectic travel challenges but they should not check out and not participate in the trip.

So, in summary, have the "Disney Pep Talk" and always take time to savor your moments of joy on the trip. Oh and make them go to the bathroom before you go anywhere. Happy travels!

RV Kitchen Question

I recently received this RV kitchen question from a soon to be RVer:

We are avid RVers who are about to take off for a year or so with the goal of seeing all fifty states. My husband, three children, two cats and will be traveling in a travel trailer.

Our youngest child is gluten-intolerant and sensitive to a laundry list of things. I have all of her special flours/sugars in glass canisters (Pyrex or Anchor Hocking). I noticed that you cook using glassware. I’d prefer to stick with glass over plastic. How do you keep them from breaking while you travel?

Also, I’m concerned about some of the expensive flours not doing well under humid conditions or getting bugs in them. Do you ever experience this?

Here’s what I said:

How exciting your trip sounds! It may sound odd but a big part of it is where your kitchen is located. Rear kitchens tend to bounce more so cupboards may open and items may clink together. RVers combat this by using spongy shelf liner between glassware and placing items in a basket. They’ve also have been known to bungee the cupboards shut when traveling.

I have a middle kitchen and have had terrific luck. My shelves are lined and we take rough road/bumps pretty slow. Fortunately I’ve never broken anything. I set the clear Pyrex glass mixing bowls atop one another with the lids on them in the over the sink cupboards. The heavier Pyrex bowls go in a cupboard on the lined floor with shelf liner in between them. Glass wine glasses get laid on their side and wrapped in a dish towel when we roll. Small juice glasses and shot glasses sit upside down on the lined shelves above the sink. It’s a tight fit in there and that deters them from falling over and rolling around.

As for flour, etc. yes, you may get bugs. Humidity has not been a problem for us at all, though. I keep all my dry storage goods in a container (or the original package) and then in a large Ziploc bag – all air squeezed out and sealed tightly – and critters have not been a huge issue. If they are left anywhere air gets to them trouble could ensue. I’d suggest you put your glass containers in Ziplocs just in case.

Superbowl RV Recipe - Clam Dip

Okay, let me start by admitting that I am not a sports fan and I believe I married the only male in America who feels the same way about the Superbowl as I do...meh. That being said, I do love a good party and am always eager to join the RV tailgate gathering - if only for the friends and the food.

About a week ago my Superbowl-shunning-sweetie offered to make his amazingly tasty clam dip. We decided not to wait for the big day but to forge ahead. It's this recipe that I'll share with you here. Make it and take it to your favorite Superbowl party or everyday potluck...and think of me!

Raymo's Jammin' Clam Dip

1 8-oz block of neufchatel cheese - softened at room temperature
1 can minced clams - drained and liquid reserved
Worcestershire sauce - 4-6 shakes to start
lemon juice

ridged chips to dip (Trader Joe's has the most divine dip chips)

In a medium-sized bowl, using a fork, mash the neufchatel cheese. Add clams and Worcestershire sauce and stir. Add appx 3/4 of the reserved clam liquid and a squeeze or two of lemon juice. Taste. Add a little more Worcestershire, clam liquid and/or lemon as desired - tasting as you go until you've found clam dip bliss. The mix will be slightly loose - no worries.

Transfer to a small serving bowl, cover and refrigerate a few hours to overnight. The dip will thicken and the flavors will meld.

Serve with chips and enjoy!

I have to confess - I could eat the entire bowl in one sitting - I even use my finger as a spatula to get at the very last bit of this delish dip! Try it and let me know what you think.

About 12 years ago I discovered a book that changed my life – and I don’t say that lightly. It’s called Your Money or Your Life by Joe Dominguez and Vicki Robin. While as a fulltime RVer I’ve culled down my possessions to only the most beloved or useful, my dog-eared copy of Your Money or Your Life has come along for the ride. Anytime I find myself getting sucked back into the “Have. Do. Be.” mindset I break it out and reacquaint myself with the concept of how finite our time on earth is and how that relates to our “actual hourly wage”. I suppose you could say I have strongly taken up this book’s philosophy of “making a living” vs. making a life.

That’s why just today as I was scanning a very good, uber-enlightened and longtime friend’s Facebook page I was delighted to come across this article by Elizabeth Lesser posted on the WomenofGreen.com blog. Reading this brought about a huge “oh, yeah, that’s right” moment for me and I wanted to share it with you. For more than three decades, Elizabeth Lesser has worked with leading figures in the field of healing self and society. In 1977, she started the highly respected Omega Institute of Holistic Studies which she envisioned, along with co-founder Stephan Rechtschaffen, as a dynamic “university of life” designed to foster personal growth and social change. In this guest post, Elizabeth wonders about the concept of “enough” and suggests five steps that support thoughtful action in alignment with your principles and desires.

The other day I was having lunch at work with a few friends. Two were in their 30s with young children, demanding jobs, and seemingly impossible schedules. One was single, childless, and in her 40s. And I’m in my 50s with an eclectic work and family life that involves a blend of 9-5, travel, and chunks of time spent in the solitary netherworld of writing. “I have a question,” I said to my colleagues. “When I say, ‘How much is enough?’ what comes to mind?” “Enough of what?” one of my younger friends asked. “Enough of anything. What’s enough success? Enough good deeds? Enough parenting? Enough creativity? Enough sex? Enough apps? Enough emails, tweets, texts? Vacations, clothes, shoes? In a world of unlimited possibilities, how do you know when to stop? How much is enough? Do you know what I mean?”

Everyone nodded vigorously. Regardless of age or lifestyle or to-do lists, we all got the point. A collective sigh arose from our lunch table. If it weren’t for the plates of food, I think we would have cradled our heads in our arms and taken a long nap. It seems as if humankind made a group decision just a few years ago to pick up our collective pace. You know those long moving walkways in airports? Where you step on and suddenly you and everyone else are going a little faster? That’s what things feel like to me these days—like we jumped on the fast track and now we can’t get off. But we can, actually.

We can break out of our group trance; we can turn ourselves around, walk against the current, and step off the moving platform—at least long enough to ask some important questions. I call them the 5 W’s: the What, the Why, the Where, the Who, and the When. It helps to have a real-life concern in mind when considering the 5 W’s. So think of one “how-much-is-enough” issue you are wrestling with. Maybe you’re wondering if you should enroll your daughter in gymnastics on the one free afternoon of the week; maybe you’re thinking of working over-time or taking a second job; perhaps you don’t feel you’re making a big enough difference in our hurting world; or it could be a smaller matter, like you’re not sure if you really need the newest iPhone. Pick one issue (just one!) to ponder, and then apply the 5 W’s.

WHAT matters most? What brings you joy, peace, and a sense of purpose? You may need to quiet down for a few minutes before you can tap into that answer. It may take more than a few minutes; you may need to sift through many layers of social and family conditioning to discover what’s really important. It’s worth the digging. The key to knowing how much is enough is to give voice to your deeper values.

WHERE is the hidden cost? You pay a price when you accumulate too much, push yourself too hard, or multi-task too furiously. Beyond the obvious stress of debt or exhaustion, constant striving can exact other tolls: the loss of community, family tension and diminished relationships, as well as compromised health and frayed nerves. There is a direct correlation between the speed and excess of our current lives and the amount of pills popped for body and soul.

WHY are you doing it? Will _________(fill in the blank) engender health and happiness, love and connection, peace of mind and generosity of spirit? Or will it just provide you with more stuff, more stress, more stimulation? Do you really think it will benefit you or your loved ones, or are you just sort of addicted to having more—more money, more experiences, more gadgets, more going, getting, giving? Have you sacrificed the simple pleasures of every day life for the illusion of more-is-better? And will future generations look back and wonder why we sacrificed their wellbeing for our addictions?

WHO are you doing it for? This is an important question. So much of our activity and consumerism is based on keeping up with the mythical Joneses. We imagine there’s some sort of cosmic tribunal judging the worthiness of our life and comparing it to the lives of other mortal beings. And so we end up doing things, and being things, and buying things in an attempt to impress everyone from our parents to the Joneses to the big committee in the sky.

Here’s a little secret: if there is a cosmic committee, the members want something so much grander for you than more stuff or more status. And here’s another tip—the Joneses are also comparing themselves to someone else—maybe even you. So whatever you do, do it for you—the deeper you. Put your energy into being your most genuine, fully alive, and generous self. And start now, because…

WHEN do you stop striving and start living? When you work in order to achieve a future goal, whether it’s to build the dream house or save the planet, you often forget to celebrate what’s already in the house and on the planet. That’s not to say you shouldn’t dream or you shouldn’t try to improve yourself or the world. But as the great civil rights activist Howard Thurman said, “Don’t ask yourself what the world needs. Ask yourself what makes you come alive and then go do that. Because what the world needs is people who have come alive.” So, instead of longing for more, consider loving whatever bounty you already have. Instead of excess, cultivate excellence. And instead of later, do it now.

We should consider ourselves lucky just to be pondering the 5 W’s. They are not the kinds of questions asked by people who are hungry or homeless or lacking the bare necessities for survival. Even so, the 5 W’s are not easy things to pull off. Best to hold them as gentle guidelines. Discovering how much is enough is a path, not a prescription. The great Persian poet Rumi wrote some lines in the 12th century that still can guide us in the 21st:

Let yourself

be silently drawn

by the stronger pull

of what you really love.

There’s a total game plan packed into those 14 words, starting with “silently.” It’s in the silence where we can discover how much is enough. If we just rush noisily from one thing to another, how will we ever feel the stronger pull that Rumi alludes to? How will we even know what we really love if we never drop down into the quiet waters of the heart? The next time you are faced with a “How much is enough?” dilemma, take a few deep breaths, dip down into the silence, and see if you can feel the stronger pull. And then follow it. It may not lead to the mall, but I promise it will bring you the golden treasure of enough.

Elizabeth Lesser is a New York Times best-selling author and the co-founder of Omega Institute, the United States’ largest life-ling learning center focusing on health, wellness, spirituality, creativity, and social change. For more than 30 years Elizabeth has worked with leading figures in the fields of healing—healing self and healing society. Before we get to the answers, here's a simple and elegant champagne cocktail - 3 parts champagne and one part fabulous fruit juice such as pomegranant, cranberry or peach. If desired, sweeten it up by dropping a sugar cube in the bottom of the glass before gently pouring.

1. b - In Asian celebrations, long noodles are eaten to bring long life...but don't break the noodle before it's completely in your mouth!

Visit / RV Las Vegas for Business or Pleasure

For many industries it is convention season and it turns out Las Vegas is a hot spot this year for many of my working friends. And what’s not to love about “visiting” Vegas for business or pleasure (or maybe even a little of both), huh? Flush with cash or watching your pennies, play your cards right and you can’t lose.

While you might have read that Las Vegas is not the free fun playground it used to be, I disagree. Sure, there are plenty of upscale places to dine, triple-digit show tickets, and spa adventures of a lifetime – and if you can swing it I recommend splurging at least once – but there are just as many low or no cost ways to get a lot of bang for your buck.

Remember, LV is desert – be on the safe side and bring a jacket or sweater. Even if it’s not cold outside (and it does cool considerably in the evenings) the a/c is usually blasting inside. And please, don’t forget the camera!

Whether you’ve driven your RV the distance to check this trip off your bucket list, you love the bright lights, or you’re in town for seminars and Expos get out, stretch your legs, and take in all the glitter and glitz! Omega-3 Supplements Might Just Rock Your RV World

You know it's pledge drive time on PBS went perennial presenter Dr. Daniel Amen is on again with his Change Your Brain, Change Your Body program (it's a fabulous book, too) ...and I love it! After all this time I don't think I've seen the whole program so I'm usually tickled when I channel surf to it.

The other night I came upon the very beginning and heard him say that a combination of fish oil (about 1K mg/day) and 45 minutes of brisk walking 3 days a week is very effective with weight loss. Either alone is great but put them together and you'll see results in the waistline department.

With the change of seasons and this positive omega-3 news I was reminded of one of my "ah-ha" omega-3 moments. Always interested in learning about having a healthy brain and heart I came across an article in Prevention Magazine by science writer Susan Allport called 'The Vanishing Youth Nutrient'.

In this article Allport points out the difference between omega-3s (what she calls spring fats) and omega-6s (what she calls fall fats) and it made complete sense to me. A light bulb went on!

In one part of the article she writes:

It wasn't until Australian researchers showed a clear difference between membranes full of omega-3 fats and ones full of omega-6 fats - a clear metabolic difference - that I explored the seasonal aspects of these two fats. When Tony Hulbert, PhD, at Australia's University of Wollongong, determined that the metabolism of a species--every species on the planet--is a function of the amount of omega-3s in its tissues, I began to connect the dots...

It is no coincidence that hibernating animals...do not go into hibernation when their diet is full of omega-3s, as it is in the spring and summer. Their diet must change to one rich in omega-6 seeds before these animals will slow down for the winter.

It is no coincidence that animals that migrate long distances...fill up on omega-3s for their long journey. These birds know what human athletes are just starting to learn: High omega-3 concentrations in muscle membranes lead to improved performance.

Want an irresistible dish to wow your family and friends? Careful...they're addictive!

Many moons ago – way before we began our RV adventure – we visited my husband’s childhood friend in central NY and were treated to an easy picnic dish that I have not seen anywhere else – salt potatoes. A wonderful addition to bbq fare, this tasty little side dish is a staple in this part of the country. Almost every grocery store in the area carries a 5 pound paper bag of

Hinerwadel’s Famous Salt Potatoes – small potatoes and a bag of salt.

Why salt potatoes here? Turns out Syracuse, NY was a major salt producer. According to http://www.ilovethefingerlakes.com/:

“Commercial salt production from brine wells began in the Finger Lakes on the shore of Onondaga Lake in Syracuse when it became difficult to obtain salt from abroad during the War of 1812 with England. The refining of salt was Syracuse's largest industry at the time, and it supplied salt to much of the country. The building of the Erie Canal allowed the bulky and low-priced Syracuse salt to be transported to Chicago and beyond relatively quickly and inexpensively by way of the Great Lakes. Although the Erie Canal was known by many names, those in Syracuse called it ‘the ditch that salt built.’”

Many of the workers were Irish and brought potatoes for their meals to be boiled in the salty water from Onondaga Lake – thus the humble beginnings of the salt potatoes we know and love today. The going salt to water ratio is 4 ½ pounds of potatoes to 1 ½ cups of salt but those numbers can be adjusted to your personal taste. If, by chance, you get the water too salty you can rinse some of the potatoes to mitigate the salt.

Here’s how it’s done:

Salt a large pot of water using the ratio noted above and bring to a boil (you could do this on an outside burner), add the scrubbed potatoes (peels left on please) and boil until cooked but still firm – about 10-12 minutes. Serve with plenty of melted butter. If desired, sprinkle and mix with chopped parsley or rosemary.

Cook the whole batch at once – you’ll save propane and if you have leftovers for the next day all the better.

I enjoy salt potatoes even when I’m not in the central NY area by picking up a pound of small white potatoes and using kosher salt in the water. Try it and don’t be surprised if salt potatoes become a family favorite in your RV!

RV Collectables - Town Names

We RVers have been known to collect all sorts of interesting things in our travels and the smaller and lighter the collectable the less friction on the road (ladies…many of you know exactly what I mean and I’m not talkin’ wind drag here…). Popular memory joggers in our house include photographs, soap, and, of course, yummy consumable food items. Some of my RV friends collect words…bumper stickers, clever church marquee sayings – even unusual vanity license plates. Though I don’t know anyone personally that collects town names, it is intriguing.

I recently came across a piece in Reader’s Digest that caught my eye because the first line mentioned the town of Boring, Oregon. Many years ago I lived in Portland, not too far from Boring, and I know firsthand that here are no greater or fewer number of dull people in the town…but what a name!! Read this fun story written by humor editor Andy Simmons.

Best Town Names

“I was holed up in Boring, Oregon wondering whether I should try someplace different. So I hopped in my car and drove to Why, Arizona, to figure things out. After a few days I found my answer in Whynot, Mississippi: I needed a town with some life to it. I made a beeline for Disco, Tennessee, where I danced so much I wore out my shoes. The next day I headed to Loafers Glory, North Carolina, for a new pair. Afterward I looked sharp enough to take a break in Handsome Eddy, New York. Eddy wasn’t around but I knew where to find him – in Loveladies, New Jersey, where it seemed all the women were trying to get to Husband, Pennsylvania. It was a tough town. One gal told me my romancing needed some work and sent me to Sweet Lips, Tennessee. Heartbroken, I put the car on cruise control and drove to Lonelyville, New York, for a stiff drink. I made a pit stop in The Bottle, Alabama, and finally hit rock bottom in Condemned Bar, California. Not surprisingly, I woke up the next morning in Cranky Corner, Louisiana. I knew that if I continued like this I would be headed straight to…Hell, Michigan. Pulling myself together, I grabbed breakfast in Oatmeal, Texas, lunch in Sandwich, Massachusetts, and dessert in Pie Town, New Mexico. I should have stopped eating after Greasy, Oklahoma, because I was feeling pretty sick by the time I left Lick Skillet, Tennessee. In Brilliant, Ohio, it finally dawned on me – I had to cease my wandering ways. I was parked in Do Stop, Kentucky, took out the map, and chose my new home. I didn’t need Wealthy, Texas, or Fame, West Virginia. I found everything I needed in Happyland, Oklahoma."

The Joy of Being an Artist on the (RV) Road

Donna and her husband Jeff pulled in next to us not too long ago. They were our neighbors for a couple days before we had an opportunity to chat. Once we did we became fast friends. Donna told me she was an artist and invited me in to show me some of her work. Wow - I was extremely impressed. Prior to seeing her work we were talking about careers and ways to make money on the road. Once I saw her art I knew she'd never be at a loss...she's amazingly talented. Donna graciously agreed to pen a few articles about being an artist on the road - in her case in a trusty Airstream Travel Trailer. Enjoy this, her first installment - Evanne - RV Cooking Show

For the past 3 years my husband and I have been fulltime RVers and can’t imagine a more wonderful life. I am a fabric artist, my husband a writer, poet, composer and musician at this point in our lives. The places that inspire my artistic vision are often in places we could never afford to buy but RVing affords moments of these to absorb, enjoy and take away in memory. The changing of place and surroundings, the seaside spot overlooking a bay, the sunsets are visuals that encourage me to look at color, shape and hue. Inspiration from nature outside our back window continually nourishes my creativity and appreciation for this lifestyle.

My ‘studio’ consists of any spot available but primarily the table where the wrap-around windows allow me light and view. My previous art studio was a 14x18 foot room so the conversion to smaller projects was a must and a challenge since we live in a 27’ Airstream Travel Trailer. You might wonder how I made this work.

Here is how I did it: When we began our fulltime adventure I brought almost all of my fabric (hard to imagine!) and placed them by colors in 4 snap top containers; they live in the truck bed under the truck cover along with one box of other necessary tools. There is also a small art bin of paints (watercolor and fabric) as well as a container of beads - I am a long time beader and do mixed media pieces.

In the coach, whom we call Lily, is the art work(s) in progress plus a number of finished pieces. This consumes much of the under-the-bed space with an iron pad, etc. and Bernina 440QE sewing computer (when not in use) on my side of the bedroom walkway. As you may be able to extrapolate, my husband is incredibly supportive of my art endeavors – a real must in such a cozy space.

It’s no surprise that flexibility is the key to RVing so I take this to include “doing yoga” while I cut fabric on the floor or have to contort my body to squeeze in and out of my sewing space. This often means across my beloved’s lap and his small classical guitar when he is playing. It brings ‘mindfulness’ to our life; in more ways than one.

I try to remember to take a moment, breathe in and breathe out and feel grateful for how lucky we truly are to have this ever-changing, adventurous life filled with love, freedom, art and new friends.

Next time I’ll share with you the challenges of creating my art while on the road in my RV.

RV Towable and Vehicle Weight Ratings - Rules of the Road

GVWR, CCC, UVW, GAWR…UGH!! Acronyms like these can make your head spin. One of the secrets to a pleasurable RV experience lies in knowing what each of these mean and applying them to your specific situation. It’s widely known that an overloaded or underpowered rig can be a challenge to drive but the other side of the equation is safety. Let’s explore the common vehicle weight rating acronyms you are likely to encounter when RVing.

If you happen to be in the market for a new (or new to you) RV make sure you understand these terms and make a suitable match...espescially if you are purchasing a towable/tow vehicle combo.

GVWR – Gross Vehicle Weight Rating

GVWR is the maximum allowable weight of a vehicle – be it a truck, car, trailer or motorhome – regardless of storage space. The max weight reference refers to a fully loaded vehicle and includes fuel, people, cargo, etc. The GVWR may never be exceeded!

UVW – Unloaded Vehicle Weight

This is the weight of the vehicle as it comes off the manufacturing line PLUS a full fuel tank (full generator tank also), oil, coolants. The UVW does not include the weight of any dealer or after market installed upgrades such as a sleeper sofa instead of a J Steel, TV or satellite dishes, awnings, etc.

CCC– Cargo Carrying Capacity

The CCC refers to the amount of weight (or cargo) you can load into the vehicle. This is GVWR minus UVW, full fresh water weight (including water in water heater), full LP gas tanks, and passengers.

So, for example:

GVWR is 12,000 pounds (the max it can weight)
UVW is 10,000 pounds
Less fresh water (in your fresh tank plus your water heater) @ 8.3 pounds per gallon
Less propane @ 4.5 pounds per gallon
Less passenger weight

By the way, did you know that the average full-time RV carries 2,000 pounds of "stuff"...that's a ton! Be careful here. Just because there is bin and closet space does not mean the vehicle is equipped to roll packed to the gills.

GCWR – Gross Combined Weight Rating

The combined weight of your fully loaded RV and your towed vehicle or your tow vehicle and fully loaded trailer is the GCWR. The GCWR may never be exceeded!

GAWR – Gross Axle Weight Rating

Each axle is rated to carry a maximum amount of weight thus the GAWR. You may not exceed this number on the front axle and make up for it on the rear axle – it is the weight per axle. The GAWR may never be exceeded!

Tow Rating – Used in reference to a tow vehicle – the tow rating is the maximum weight that the vehicle will safely tow. The tow rating may never be exceeded!

Now that you are familiar with these terms where can you find out your vehicles specs? Cars and trucks usually have a sticker with these ratings on the inside of the driver door. Towables have a sticker on the front left side exterior wall as well as a spec sheet inside a cupboard door. Motorhomes will have this information on the driver door edge or pillar.

Armed with this knowledge, it’s a great idea to weigh your RV regularly – once a year or so should do it. Truck stops typically have scales and charge reasonable fees of less than $20. Prior to being weighed fill your fuel tank, make sure your holding tanks and LP tanks are as you usually travel with them and your passengers are seated in the vehicle. This should give you a true to life picture of your RV’s weight. Remember, never exceed your weight ratings – travel smart – travel safe.

It’s RV Buying Season

No surprise, with pleasant temperatures, warm sunshine, and longer days, thoughts naturally turn to the great outdoors and one of my favorite topics – camping / RVing. Whether you are new to the game or like almost every RVer I know…always in the market for a new camper – this spring RVers will find plenty of terrific buying opportunities in today’s economy. And there’s a lot to consider before making that final decision. In this post we’ll talk about a few things you should consider when looking to buy an RV.

Begin by identifying the type of RV you’d like: Class A or C motorhome, Class B van-type, pull-behind travel trailer, 5th wheel or toy-hauler. If you are unsure, visit RV dealers and your local RV show to get a feel for each type. Regardless of what style of RV you choose it’s vitally important to make sure either the vehicle used to tow the trailer can adequately handle the weight of the RV or the ‘toad’ (tow behind car) is suitable as a towed vehicle. Consider talking to other RVers about their campers…they are a wealth of knowledge and almost always willing to share.

As you think about your adventures and look around at a variety of RVs here are some points to keep in mind:

How will you use the camper?

Will this be a weekender, a part-time or full-time home or a trusty steed to take you on a cross-country summer sojourn? Based on your answer you’ll want to consider the RV’s storage capacity. Are the outside bins adequate for the gear you’ll want to carry? Are the inside pantries, cupboards, drawers, and closets spacious enough for your belongings and food stuffs? Be realistic.

If you are going to be in the camper for an extended period of time will you travel with crafting, workshop or other materials that will need space?

Do you have pets that want to roll? Are you a camping family or independent couple? Might you have kids, grandkids, friends or other family come along on occasion? Make sure there’s plenty of room for all travelers.

Where would you like to camp?

Campsites run the gambit from ultra-fancy big wide sites to cozy wooded just big enough sites. Many state and federal parks have length and slide-out restrictions so if that’s your dream, plan accordingly.

If the mountain west is on the agenda you’ll need a camper with hard walls in order to camp in many ‘bear country’ parks.

Make sure the engine or tow vehicle is capable of handling mountain driving (prevalent all across the US)…both up and down.

Are you planning on doing some snow camping? Make sure the RV you choose has proper insulation.

If you intend to do a lot of boondocking or dry camping does the RV have or will you install solar panels? Also consider fresh water, waste water, and propane tank capacities.

Slide-out Considerations

Slide-outs are great when they’re open but if they fail to operate or you’re having lunch at a rest stop will you still be able to get to the kitchen and/or bathroom with them closed?

Be Safe…

If there are two adults both should be comfortable driving the unit…just in case.

If you think you’ll stay at Wal-Mart or other such locations on occasion will you feel safer if you have a motorhome as opposed to a pull-behind that would require you to move from the trailer to the truck in case of an emergency?

Remember the PDI

Once you’ve made a decision – whether it be a private or dealer transaction – you absolutely must do a pre-delivery inspection. I’ve made it easy by providing another post on this topic as well as a link to a handy dandy pre-delivery inspection checklist. Take it from an experienced RVer…not only is this important, it's smart.

Deviled Egg Recipes Compliments of South Padre Island KOA RV Resort

Deviled egg lovers rejoice…Easter is here and after the hunt households across the land will be turning those colorful orbs into delish deviled eggs.

Not too long ago my friends at South Padre Island KOA had a deviled egg contest and were kind enough to share a few of the winning recipes with me. Now I’m going to pass them along to you.

Just in case your “eggs” are the pull apart plastic variety, my gal pal – the domestic diva Martha Stewart – shared her no-fail boiled egg technique with me (and her other 2+ million “Living” readers) and I’ve found it to be nearly foolproof. She suggests:

Bring fresh eggs to room temperature. Place them in a large sauce pan and cover them with cool, generously salted water. Bring the water/eggs to a rapid boil. Cover the pot, turn stove off, and allow to sit for 12 minutes. Transfer eggs from the hot water to an ice bath. Peel under a trickle of cool water – shells should slip right off.

While everyone knows deviled eggs are delicious and are an RV park potluck staple, you may not know how the term “deviled” came about. The earliest mention of it in writing was in the 1786 Oxford English Dictionary and read: "Devil...A name for various highly-seasoned broiled or fried dishes, also for hot ingredients. 1786, Craig Lounger NO. 86 Make punch, brew negus, and season a devil.”

In the early 19th century they deviled all kinds of food including meat, fish, and even biscuits! In the late 1860’s the Underwood boys tinkered with ground ham and seasonings and poof…deviled ham and the Underwood Devil.

Another interesting piece of trivia I discovered is the use of the terms "salad eggs" or "dressed eggs" in the South and Midwest to describe these potluck or covered dish standbys - particularly when the dish is served in connection with a church function presumably to avoid dignifying the word "deviled".

Fast forward to 2010 and the terrific South Padre Island KOA Deviled Egg Contest…

RVer Pat Dahl took first place with this tasty concoction:

1 dozen eggs, hard boiled

Cut in half and remove hard yolks to a mixing bowl. Mash with a fork and blend in:

1 c mayonnaise (appx)
1 T mustard
1 t vinegar
1 ½ T dried minced onion
1 T dried minced garlic
1 T dill pickle juice
½ t garlic powder

Before stuffing egg whites, cover the bottom of each egg half with real bacon bits. Stuff and garnish with sliced green olives.

Second place went to RVer Mary Freiberg’s Beautiful Island Festive Deviled Eggs:

18 eggs, hard boiled

Place peeled eggs in a plastic bag and add:

1 can sliced beets
2 T pickling spices
½ c tarragon flavored vinegar

Allow to marinate in the fridge for 2 days.

Cut in half and remove hard yolks to a mixing bowl. Mash with a fork and blend in:

1 t yellow mustard
3 T mayonnaise
1 t sea slat
1 T tarragon flavored vinegar

Stuff mixture into egg whites and garnish with cracked pepper and slim slice of beet (curved) and cilantro leaves.

Third place was captured by RVer Betty Buol:

1 dozen eggs, hard boiled

Cut in half and remove hard yolks to a mixing bowl. Mash with a fork and blend in:

12 eggs
½ c mayonnaise
½ t balsamic vinegar
2 t sugar
¼ t celery salt
2 T grated onion
4 strips of crisp bacon, chopped
dash of pepper

Stuff egg whites and enjoy!

Martha has a couple other tips including how to get a clean cut when halving eggs – use a sharp paring knife and wet the blade between cuts – and a taste tip for extra rich and delicious yokes – add a ½ t melted butter.

As for me, I never forget the paprika – both in the yolk mixture and sprinkled atop for color. Bonus for your taste buds if it’s smoked paprika (like we used in the RV Cooking Show episode featuring amazing panini burgers at Theo Roosevelt National Park)!

RV Cooking Show Crew Discovers Stone Crab Floaters

I’m not a cheapskate and on occasion I’m not even frugal (as evidenced by the $50 FitFlop flip flops I bought not too long ago. They are supposed to firm and shape my thighs and butt so I listed it in the “workout expense” column. How’s that for rationalization, ladies!). Like most of us, however, I do want my dollar to go as far as possible. That’s why I was tickled to learn about stone crab floaters - and you might be, too.

The RV Cooking Show was doing some research and development in Old Homosassa, FL and discovered a little fish market right on the water. Showcased were some big and beautiful stone crab claws along with big and beautiful prices. Lucky for me I’m the curious kind and that really paid off when I saw 'floaters' listed on the board in the stone crab section at only $4.50/pound. Turns out floaters are a hit with the locals, go figure. Stone crab floaters are claws that have molted and the meat has not yet fully filled out in the shell. They are called floaters because they float to the top of the boil basket when cooked.

Turns out the floaters I enjoyed were a nice size, very meaty, sweet and delicious. It’s simply untrue, as I’ve read on the web, that they are void of meat. Nope. In fact, they were so good I went back and got more. This photo from the RV Cooking Show kitchen is a full pound of stone crab claw floaters…prior to supper!

No wonder they are a locals favorite! You can enjoy stone crabs warm or cold and lots of folks dip the meat in melted butter, mustard sauce or apply a squirt of fresh lemon juice. The RV Cooking Show crew loves them cold and as they are – no sauce or anything (but plenty of napkins – the boiling water gets inside and can be very messy)…delish!

Unfortunately for us, we saw this tip too late – a website suggested the best way to crack the claws – as opposed to a cracker or mallet/hammer – is to hold the tips of the claws in your fingers and smack them against one another. Supposedly this cracks one of the claws perfectly. If you try it let me know how this technique works.

And a few closing stone crab facts:

Stone crab season in Florida runs October 15th to May 15th. By the way, stone crab is renewable seafood – they take just one claw and toss the critter back to regenerate. This is akin to a lizard tail and if you’ve ever tried to catch one by clapping down on the tail you know what I mean. It takes a stone crab somewhere between 12 and 24 months to regenerate a legal-to-harvest size claw. Claws are graded according to size: medium = 5 to 8 claws per pound; large = 3 to 5 claws per pound; jumbo = 3 claws per pound; and colossal = 1 to 2 claws per pound.

While it may appear that the moral of the story is if you save a bundle by eating stone crab floaters you can buy more shoes…but really, it’s live it up every day, try local foods, and savor all an RV destination has to offer. Not sure? Ask a local – they know all the best deals!

RV Cooking Show special recipe: from the “try it…you’re gonna like it” files

Hello friends,

It’s no surprise to my many RV Cooking Show viewers and readers that I’m no baker. However, pre-RV I was once known as the “marvelous Mrs. Schmarder” when I (frequently) showed up at my husband’s workplace with a plate full of these delicious cookies. Fast forward several years and I was visiting with an RV friend just before the holidays and the talk turned to cookies. Apparently, his sis has a cookie biz and my special recipe got his attention.

You are probably thinking “c’mon…what kinda cookie...get on with the recipe” right? I hesitate only because you might wrinkle your nose and stick out your tongue before quickly navigating away from this page. Hold on now…please don’t get scared and run away. Before the 'reveal' I want to tell you my friend made my special cookie recipe for his family over the holidays and they all raved…couldn’t put their finger on the special ingredient that gave them a rich and delicious taste…even the cookie seller sis…really.

Okay, here it goes…introducing my Garlic Chocolate Chip Cookies. There, I said it…are you still here??

Yes, I know it sounds kooky but I got this recipe a long time ago (I didn’t even know what an RV was back then) when searching for something to bring to a 'garlic' party and they are fabulous. Truth is, you DO NOT taste a full on garlic taste but rather something subtle, sweet, and flavorful in the aftertaste.

The how-to is simple and you probably have the “special” ingredients on hand: 2 small cloves of finely minced garlic and pure maple syrup (not pancake syrup, okay?).

1. Place 2 small cloves of finely minced garlic in a small bowl or ramekin.

2. Cover with pure maple syrup.

3. Allow to mix, meld, and mingle while you whip up a batch of your favorite chocolate chip cookie dough. I use the Tollhouse recipe on the back of the bag…nothing fancy there. The longer it sits the more mellow the flavor...give it at least 30-45 minutes (in case you are a fast baker).

4. Right before you are ready to scoop and bake add the garlic/syrup combo, mix well, and commence baking.

Now here’s a tip…don’t tell anyone about our little “secret ingredient” (or they might not take a chance on them). Instead, see if they can guess…betcha they can’t.

Do Fulltime RVers Get Any Respect??

I often read stories about individuals that are doing unique, interesting, and unconventional things with their lives. Whether it’s moving overseas with their children, choosing an unusual career path, studying spirituality in India, being on and winning a reality TV show, or just providing their personal and often spunky view on a topic, these folks offer a peek inside lives that many of us only dream of. And then there’s the fulltime RVer.

As a proud, card carrying fulltimer those I meet (and even some friends and family) are either awestruck and a little envious about my lifestyle or, with eyes downcast, concerned about my economic situation. In both cases they are eager to know how I got here (made a conscious choice) and what my plans for the future are (keep doing this until it’s time to do something else). While times are difficult across the nation it’s important to recognize that many – maybe even most – fulltime RVers are on the road by choice not circumstance and are living their version of the American Dream...carving out their own paths.

For many young fulltime RVers (those not yet retired and eligible for traditional social security and medicare benefits) the decision to break the mold comes from a sense of adventure, self-assurance, and a huge dose of “what-if”. Some of us took an early retirement buy-out when our company downsized, were simply let go, or chose to explore a life outside the usual and customary. Living this lifestyle requires a drastic adjustment. Space is tight, alone time is more challenging to find, “things” must be left behind or sold, there’s always a new grocery store, gas station, or post office to locate and navigate, your support circle must become a “virtual” safe place, you’re always a new patient at the doctor’s office, and there’s always a new, unknown route to navigate.

Why do we do it? Maybe it’s the age-old question…what’s around the bend. This might and can be interpreted literally but is usually meant in the bigger context of life. For me (and many others) it’s freedom - seeking new ways of seeing the world and defining success as a personal matter. The most frequent comment I get from older fulltimers is that they wish they had of begun this lifestyle earlier – when they were healthier and more physically able to explore. One young fulltime couple I know recently left “the road” to move in and financially assist mom. They wrote me saying “We sold our RV and truck and are considering going into business for ourselves. If fulltime RVing and workamping has taught us nothing else - it is that we are able to reinvent ourselves when we choose to.” Talk about freedom, right?

So do we get any respect? I suppose fulltime RVers fly under most radar and perhaps we like it that way. We pay our taxes, register our vehicles, carry insurance, spend our money at local groceries, restaurants, and shops, buy tires and have our vehicles maintained at local garages, and are good neighbors. It rankles me when I read stories in the media about us…missives to park owners to beware…our kind (I think they mean those of us that stay in parks seasonally) might not mix well with travelers and could taint their businesses, school districts that might have to absorb a child that does not…gasp…live in a stick home (property taxes are built into our site fees), or political groups that try to amend our rights as US citizens to vote.

You, me, everyone chooses their own life adventures – raising children, developing big careers, experiencing other cultures. Just like any of the remarkable folks listed in the opening paragraph, we young fulltime RVers ask the same questions: Who says that we must live by what today’s culture tells us is good and right and who exactly decides good and right anyways? With courage, strength, an ability to let go, a strong sense of humor, and making choices along the way we’ve designed our very own, personal, respectable American Dream.

2010 RV Resolutions – a Roadmap

So here we are, a week-plus into the new year, and I’m wondering about your resolutions. Specifically your 2010 RV resolutions. After all, RVing is an exciting topic – it’s easy to dream about hitting the open road, seeing old friends and making new ones, experiencing the great outdoors…the freedom of an RV getaway. Did you make any RV resolutions this year??

Ask any expert and they’ll tell you that resolutions, goals, objectives...whatever you want to call them – must be specific and obtainable, in writing, include action items, and reviewed frequently.

“I’d like to travel more” or “fix up the camper” may not cut it. Begin by realistically reviewing last year…did you have RV resolutions at the start of ’09? What worked? What didn’t? Why? Once you’ve thought through the past year you’ll have a better idea of what to shoot for in 2010 and how to approach it.

Using the “travel more” example here’s how your RV travel resolution might look:

Take the camper out 4 times in 2010

To accomplish this I’ll:

• Talk to my family about their RV travel desires
• Research destinations within a 100 mile radius of my home
• Explore events, festivals, and activities in those destinations
• Surf the internet and ask friends about RV parks and campgrounds
• Create an RV travel fund – setting aside $XX/week

Even if you are a fulltime RVer (and even if you are not) there are plenty of topics you can “riff” resolutions on:

• Theme-travel
• Connecting with family and friends
• Green RVing
• Volunteer programs
• Sharing your travels
• RV/camper projects

The list is as rich as your imagination. With RV travel as the topic it’s not too difficult to quickly identify what RV-specific goals you want to focus on in 2010. Make a date with yourself to review your RV travel goals at least once every other month. Revise them if you must…it’s your life and circumstances change. No pressure.

I thought I’d share a few of my 2010 RV resolutions…my RV roadmap for an exciting and successful 2010. Some of these are personal and some are professional and I’ve only listed the general goal – not the action items:

• Embark upon a bicycle theme this year – specifically rails-to-trails
• Explore the concept of food as medicine
• Seek out new ways to further green my RVing lifestyle
• Recarpet my RV
• Communicate with RV Cooking Show viewers and readers weekly
• Continue to bring value to RV Cooking Show viewers and readers via new concepts, web extras, inside scoops, etc.

Here’s to a healthy 2010 full of safe and exciting RV travels, friends at every stop, and delicious dishes in your RV kitchen!!

Merry Christmas with Mama's Macaroons

Ask my friends and they'll tell you - dinner at my RV is delicious...but bring the dessert. I consider baking an exact science and myself a mad-scientist. A handful of this, a drop or two of that, why not toss in (fill in the blank). Works great in 'cooking' but baking, no. So I try to keep it simple but still tasty. Enter my mama's coconut macaroons. The perfect mix of moist and chewy inside, crispy-crusty around the edges, sweet but not too sweet, and beautifully brown on top, these RV Cooking Show Mama's Macaroons might just make your "best-baked" list.

These cookies make a fast and delicious gift...if you can resist eating them first!!

Ingredients

2 egg whites (save the yolks for cesar salad dressing, perhaps?)
3/4 c sugar - I use extra fine granulated sugar - measures the same but dissolves better than regular sugar
salt - just a pinch
1 t of real vanilla extract (you can substitute almond extract in place of the vanilla or mix the two to equal a teaspoon)
1/4 c flour
2 1/2 heaping cups of coconut

Optional: high-quality chocolate - about one bar

How-to

Preheat the oven to 325. Line a cookie sheet with foil or use an unlined pizza stone. In a medium bowl whip egg whites, sugar, salt, and vanilla. Add flour and mix well. Blend in coconut with a spatula. Drop by teaspoonfuls onto cookie sheet or stone - about an inch apart - being careful to not make them too big - just about a silver-dollar size.

Bake 15-20 minutes or until the top is toasty brown and the edges look crispy.

Remove from the oven and immediately remove the macaroons from the cookie sheet or stone and cool on a wire rack.

Optional: Melt the chocolate in your microwave or in a small saucepan on low. Drizzle over completely cooled macaroons.

Holiday Greetings RVers - Desiderata

If you are a wordy sort like me you may have a few poems or stories that inspire you, cause you to reflect, remind you of what's important. Used in author Max Ehrmann's 1933 Christmas greeting and intended for use in Adlai Stevenson's 1965 holiday message, Desiderata is especially relevant in today's world.

It's noted in the book "Desiderata: a survival guide for life" that Ehrmann wrote this prose for himself 'because it counsels those virtues I felt myself most in need of'...it was his guide for striving for simplicity, sincerity, and serenity.

I keep a copy near my desk and once in a while choose a snippet to ponder. I think there's a little something for everyone in this poem.

If you are familiar with Desiderata perhaps you'll enjoy seeing it again. If it's new to you take some time to explore it and consider how it relates to your life.

RV Campsite Party Light

ALERT: This would make a terrific holiday gift for your favorite RV, garden, or outdoor lover!!

Whether you’re out there camping, have a reservation for your next RV trip on the books or are simply dreaming about going RVing it’s always a pleasure to create a useful, unique camping craft to take along. If you’ve ever taken a walk around a campground at night chances are you’ve seen what I like to call “RV party lights”. They come large and small – hanging on a plant hook, off a rig or strung together on an awning.

I was first introduced to this kitschy must-have camp item at my very first RV rally – the Trailblazers. Upon winning a raffle I was offered a choice of prizes. My eyes immediately locked on to the colorful – and practical – RV party light. From then on my husband and I were hooked. We made them for ourselves, we made them for our neighbors, we made them for visiting friends. Fun stuff!! Based on a request from an RV Cooking Show fan, I’d like to share with you the how-to’s of making a cheery RV party light.

The RV party light will be a colorful, low-light source. Imagine an embossed planter turned upside down and embellished with see-through colorful beads in an eye-pleasing design. If desired, theme your RV party light. I’ve seen USA, Christmas, flower garden, and seashore themes to name a few. Let your imagination run wild and hey, send us a photo of your completed party light, okay?!?!

Supplies Needed

• Hard Plastic Embossed Planter with saucer (drip catcher) – light color – size of your choice (Walmart usually stocks a selection)
• Acrylic Beads – a variety of sizes, shapes and colors (I like multi-colored but you can certainly go with a color theme matching your RV, a holiday, etc.)
Starburst 12-25mm
Tri-beads 11mm
Faceted Rounds 8mm
Faceted Rondelles 6mm
• 4 1 ½ x 8 brass drywall screws
• Medium base, keyless lamp socket with 6-foot power cord
• 60 watt light bulb

Other Items Needed

• Drill with 1/8, 3/16 and 3/8 inch drill bits
• Hot glue gun and glue sticks

Here’s What You Do

Step 1 – Create a bead design on the outside of the planter. Mark with small dots.

Step 2 – Remove the saucer (drip catcher) and using your 3/8 inch bit, drill a hole for the socket threads in the center of the bottom of the planter. Drill 3 evenly spaced vent holes an inch or more out (depending on the size of your planter) from the socket hole for heat ventilation.

Step 3 – Using the 3/16 inch bit, drill holes on the outside of the planter corresponding with your marked bead design.

Step 4 – Using the 1/8 inch bit, drill 4 evenly spaced holes around the top outside edge of pot (which will be the bottom of the light) approximately a ½ inch down from the edge. Drill 4 matching holes (must line up with planter holes) in the saucer (drip catcher) piece – sitting right side up.

Steps 5 – Using your hot glue gun attach the beads on the outside of the planter over the drilled bead design holes (so light can sparkle through).

Step 6 – Install the lamp socket inside the planter. Screw in the light bulb. Test to make sure it works.

Step 7 – Assemble the saucer (drip catcher) “base” with the 4 drywall screws. The saucer (drip catcher) piece should be smaller and fit inside the mouth of the planter – which is now upside down - the saucer (drip catcher) is right side up.

Step 8 – Hang your RV party light, plug-in and enjoy!!

Some safety notes: Never leave the party light unattended – always unplug it when you go inside or away for the evening. Don’t leave it out in the rain – the lamp socket is not weatherproof. Keep it clean and free of cobwebs, fallen leaves or anything else that may be combustible. Use common sense safety rules.

Serve up a spooky “Monster Buffet” for squeamish Halloween party pleasure

Are you having a Halloween party and looking for something a bit out of the ordinary to entertain your guests of all ages? How about hosting a “monster buffet”…sure to satisfy monsters of all shapes and sizes. This buffet isn’t to dine on, though. Instead, it’s creepy, crawly, touchy, feely scrumptious party fun. Your guests will walk down the “buffet” line, getting a good feel of “eyeballs”, “guts”, “a shrunken head”, “snot”, and more…your imagination is the limit.

Here’s how it works:

Prepare a station of six or seven ghoulish experiences along a rectangular table or countertop. Visit the dollar store and purchase plastic pumpkin candy totes – like children use for trick or treat – one for each station. Each pumpkin will contain one “buffet” item. Consider:

Black olives = eyeballs
Cooked spaghetti coated generously with oil = guts
Small, hairy coconut = shrunken head
Cornstarch slime = snot (here's how to make snot - use green food coloring)
Baby carrots (leave out and allow to dry a bit) = fingers
Ripe mango = heart
Corn meal = ground bones
Ears = dried apricots
Large pickle end = nose
Popcorn kernels = teeth
Wet yarn = hair

Cover the top of each container so guests cannot see inside. Label each station with what’s inside (guts, eyeballs, snot, etc.). Have a few “crypt keepers” behind the table to help guests and discourage peeking.

Invite guests to walk the line, reaching into each pumpkin container and getting a good feel of the contents. Be sure to provide plenty of napkins or paper towels (and perhaps even a bucket of clean water) for guests to use to clean up at the end of the “buffet” line.

Tip: Avoid using any type of meat product or other item that may be unsanitary.

Enjoy this good clean fun…guaranteed to gross out even the most wicked monsters among us! Delish!!

RV Green?

Today, October 15th, is Blog Action Day – this year focusing on climate change. Pondering the topic got me wondering, how green are we RVers? It’s something I’ve rolled around in my head for a while.

As I lumbered down the highway the other day in my F-350 a Prius zipped past me and for a moment I felt a bit sheepish about my “less than green” machine. Then I began thinking…just the sheer fact that I live in my (less than 300 square foot) RV makes me pretty environmentally friendly.

Like many full-time RVers I enjoy spending “seasons” - anywhere from two to six months – in one location. I choose temperate places where the only climate control required is an open window. Showers are short, I’ve gotten into the habit of turning off the water when brushing my teeth, and RV toilets are designed to be water-use savvy. If there’s a water leak somewhere in our lines I know it and it’s repaired on the double.

Once settled in I drive less – reducing the use of fuel, needing fewer oil and fluid changes, and lessening the tire wear both on the truck and trailer. I generally use one tank of fuel per month when I’m at a seasonal location.

Living in a small space means living with less stuff. Book exchanges are welcome sights. And after all, RVing is about experiences not things. Frankly, I’d rather spend my money on parks and picnics than tschokes and trinkets. The practical nature of our being models the three R’s – reduce, reuse, recycle.

Many other full-time RVers write me saying they find they are eating and living healthier – biking, hiking, swimming, strolling the farmers market and buying local. We grill a lot –fast, fresh, and fabulous meals.

When it comes to cleaning an RV we have to be careful. Harsh chemicals can harm our plumbing systems, and destroy our sinks and counter tops. Vinegar, baking soda, and lemon are an RV housekeepers’ friend.

I’ve yet to meet a full-time RVer that told me the reason they hit the road was to be more eco-friendly…it just happens to turn out that way. And if that has any effect on global climate change then so be it – everyone wins!

Time for many to winterize their RV - tips and video

How to Winterize Potable Water Systems for RVs and Seasonal Equipment

Taking a few steps now could save you big bucks next spring on your RV, boat, pool, vacation home or any other seasonal equipment or dwellings—especially when it comes to water system maintenance and avoiding burst or damaged pipes.

Here’s how to prepare your potable water system for freezing temperatures safely, effectively and with the lowest environmental impact:

Thoroughly flush and drain pipes and fixtures: Water freezes at 32 degrees Fahrenheit, so leave as little in your system as possible.

Use a water heater bypass: Many RV water heaters come equipped with a bypass valve system. If yours does not have one, you may want to install bypass valves to protect only the parts of the system vulnerable to freeze damage. By using a bypass loop with valves at each end, you isolate the water lines from the heater tank. This allows winterization fluid to be pumped into the system without first filling the tank with fluid.

Use specially formulated propylene glycol winterization fluid: Choosing the right winterization fluid product is important to ensure the safety of people or pets that might come in contact with and swallow spilled or stored liquid. The right type of winterization fluid also can prevent harmful pollution of ground and surface water in the event of a spill. A high quality propylene glycol winterization fluid can provide freeze and burst protection as low as -50° F, and is generally safe for people and the environment.

DOWFROST™ RVR, available at Wal-Mart, AutoZone, O’Reilly Auto Parts, Advanced Auto Parts, Pep Boys and other retailers, is specially formulated for use in RVs and other seasonal equipment, and is readily biodegradable to help protect the environment. It is safe for incidental contact by people or animals and is practically non-toxic to aquatic life. It also has the added benefit of reducing our dependence on petroleum-based chemicals, because it supplements the propylene glycol with renewable plant based ingredients.

Don’t use automotive antifreeze for water system winterization: Most auto antifreeze is made from ethylene glycol, which is more toxic than propylene glycol and can be more harmful to the environment. And don’t use windshield washer fluid either, as it can freeze solid at subzero temperatures.

Flush your system thoroughly in the spring: When winter is over, drain and then flush all of the winterization fluid from your water system, using plenty of clean water. Capture the winterization fluid and any contaminated water used to flush the system and dispose of the waste liquid properly.

Consult the instruction manual: To avoid any unnecessary surprises, be aware of and follow any specific instructions provided by the equipment manufacturer.

Calling all wordsmiths, writers, witty individuals or families…can you condense your RV and camping experiences and expectations into six words? I double dog dare ya to share Six Words About Your RV Life!!

Have you heard of the six word memoirs project from SMITH Magazine? In 2006 the fine minds behind SMITH Magazine offered aspiring writers, poets, those with something to say, and plain ole witty folk an opportunity to tell their story in six words. It’s said that Hemingway did just that when challenged to write a six word story. He came up with this: “For sale: baby shoes, never worn.” Thousands of others from the famous to the neighbor-next-door have submitted their six word story in several SMITH Magazine projects including a series on Love & Heartbreak.

And this got me thinking about my own six word memoirs…stories about my life on the road, as an RVer. My motto and the RV Cooking Show’s tag line is a mere six words – “Love to travel. Love to eat.” I quickly realized we all have a story to tell, a short ditty to share – especially when it comes to our RV and camping travels.

So, with much anticipation and excitement I am delighted to introduce a special six word series – Six Words About Your RV Life. Think about your adventures and see if you can craft a six word memoir about your RV vacation, lifestyle, camping experiences. RV Park and Campground Libraries

One of the first things that I do when I get my camper setup in an RV park or campground is scout out the clubhouse. I’m interested in the restrooms, pool area and laundry but my real mission is to find the library. Library??? Yes, indeed. RVers often have a voracious reading habit and minimal storage space. Agree?

Find the library (sometimes in the laundry room) and you may find magazines, books, videos, games, puzzles, newspapers and more. It works like this – take one, leave one or borrow and return one. At the very least, book and magazine exchanges can be found at almost every park. The titles you’ll find in the camp’s library are as varietous as a big city library – magazines from Oprah to Popular Mechanics to Smithsonian to Highways, both fiction and non-fiction books - medical, travel, suspense, romance, etc. and often puzzles of every challenge level.

Occasionally you’ll run across an RV park or campground library that offers videos and/or DVDs. You may be asked to sign them out – after all, RVers work on the honor system – but chances are you’ll find an interesting selection for your enjoyment. Videos are usually not for exchange but donations to the collection are always welcome. Borrow them for a day or two – free - but please remember to return them. Games follow the same procedure and are for everyone’s enjoyment.

Perhaps you are an RVer and a reader interested in an exchange. Before you leave home gather up the magazines, books, videos, games, etc. you’ve already enjoyed and plan to visit camp libraries everywhere you stop. Don’t worry if they aren’t the latest and greatest. Not always are the magazines current but the content is as valuable as the day it came out. Recipes are still tasty, motivational advice still gets me revved, touching family stories still move me.

I always try to have a few good books on hand in the rig to exchange. You don’t have to exchange in the same genre, either. As I entered Idaho on my way to the Olympic Peninsula I was in search of a fairly recent (within 3 years) AAA Pacific Northwest Travel Guide. I found not only one but three for exchange and traded a novel for the AAA book that was in the best condition. Sometimes I find a cookbook or simple living guide that I think is too good to pass up. It’s those moments that I’m glad I have exchanges on hand.

Some of the very best RV park libraries I’ve run across are those in the Escapees parks or other seasonal or residential parks. Please respect their rules and requests when it comes to “reference” items. Believe it or not, they may have a “reference only” section – not for exchange. Who knew??

So, when packing up your fine home-away-from-home, bring along your “used” books, magazines or other entertainment items and know that more often than not interesting material is at hand – add or exchange as you see fit!!

RV Cooking Show's Top 5 Ways with Tomatoes

It’s September and in most areas of the country we are nearing the end of the tomato growing season. Sure you can get tomatoes at the grocery store year-round but, with the exception of a few sweet imports, they rarely live up to our summertime tomato memories. Sweet, juicy, fragrant, huge, misshapen, petite, rosy red, striped green, yellow or orange I love fresh from the vine tomatoes (and I’ll bet that you do, too)!

As a tribute to the beloved and fleeting summer tomato I’ve compiled five of my favorite ways I use tomatoes in my RV kitchen – in no particular order...and there are a million more. Take a stroll through my tomato repertoire and please add your own comments, recipes, ideas, and any other tomato trivia below.

Caprese Salad – This delicious Italian salad is beautiful and elegant. Perfect as a starter for an alfresco meal and good enough to enjoy as a small meal with some fresh baked ciabatta bread, it’s as easy and welcome as a summer breeze. Here’s a how-to – you’ll need fresh ripe tomatoes – sliced thick, mozzarella cheese (best if you can find buffalo milk mozzarella – if not use fresh cow’s milk mozzarella) – sliced in thick rounds, several fresh basil leaves – torn, salt/pepper, and a good quality extra virgin olive oil. Arrange the tomatoes, cheese, and basil in a circle overlapping one another. Season with salt and pepper and drizzle with olive oil. Pure heaven.

BLT – When we first began our fulltime RV adventure we stopped at my sister-in-laws – a great gardener. While there are a lot of wonderful memories from that visit the one that plays again and again is the BLT sandwiches she brought over to our camper (parked on her property) and we enjoyed in my little RV kitchen. Thick slices of fresh, grainy bread toasted and spread with a touch of mayonnaise, ample crispy, salty bacon (don’t skimp on the bacon, okay!), iceberg lettuce, and thick, dripping slices of red, ripe tomatoes from her garden. Like avocado? ‘Tis the season – add some creamy slices of the green goodness to your BLT and make it a BLTA!

Stuffed and Grilled – I’m grabbing every moment of grilling time left and have had more than my share of ooey-gooey, blue cheese stuffed, bread crumb-topped grilled tomatoes this summer. Pico de Gallo – No kidding, a neophyte in the RV kitchen I was in a South Padre Island grocery and struck up a conversation about peppers with an employee – a Mexican fellow - who proudly shared his wife’s pico de gallo recipe. What a treat – easy and delicious! This no-cook salsa-like dip has a fresh flavor that is perfect for potlucks or happy hours (served with tortilla chips) or served beside any Mexican dish. I love this dish so much that I included it as one of my trio of salsas in this RV Cooking Show episode. Watch, print, or both – it’s all good!

Roasted – This is my favorite method for saving and savoring summer’s tomato bounty well into winter. While it’s a challenge to roast tomatoes in my RV oven I jump at the opportunity (and share, too) to prepare these tasty tidbits when visiting a friend with a home kitchen. Here’s a how-to: Preheat the oven to 250. Line a baking sheet with foil or parchment paper. Brush or spray lightly with extra virgin olive oil. Thickly slice as many tomatoes as will fit on the sheet (don’t be shy – use all types of tomatoes – even cherries halved). Roughly chop several cloves of garlic (or leave clumps of cloves whole in their “paper” to roast and use later). Arrange the tomatoes on the cookie sheet, sprinkle with the garlic, top with more extra virgin olive oil and a generous dusting of salt and pepper. Bake 2-4 hours until roasted and rather dry on the outside but still a little moist inside. Allow to cool (go ahead, pop a few in your mouth and be prepared to be swept away!), gather them up into a Ziploc freezer bag and freeze for later use.

And hey, a little trivia…the jelly-like substance around the seeds contains the highest concentration of vitamin C…or so they say… And it’s been proven that our bodies absorb lycopene – thought to be a strong cancer-fighter - found in high concentrations in tomatoes – when eaten with a bit of fat – say olive oil.

A Good Time with Slime - Camping Fun for Kids

There’s nothing kids love more than camping out, roasting marshmallows, making s’mores, and enjoying the great outdoors…except having silly, messy fun that wouldn’t be permitted at home. Here’s a kids camping activity that will keep them occupied, interested and looked forward to the next trip. Slime.

Yep, I said slime – gooey, oozing slime. Don’t panic parents – it’s easy, environmentally- friendly and you might even like to get a piece of the action. Slime is a simple mixture of cornstarch, water and food coloring. Here’s how to do it – you’ll need:

* a large plastic bowl
* a large, strong spoon
* a Frisbee (for each kid) to use as a slime platter
* 1 box of store brand cornstarch
* water
* liquid food coloring (a multi-color 4-pack is a good choice)

Cover your picnic table with a plastic table cloth to protect the tabletop.

Begin by pouring half the box of cornstarch into the plastic bowl. Add a little bit of water – maybe a fast count of 5 under a faucet – and stir. At first it’ll be difficult to get the spoon through but with a little elbow grease the mixture will become rather loose. If it’s too soupy add more cornstarch and keep in mind, you’re looking for a mixed consistency a bit looser than glue.

Give each kid a Frisbee and divide the mixture up between the kids by spooning it into upside-down Frisbees. Next up is the color. Allow each participant to choose a color or a mixture of colors. A few drops should do it. This can be an excellent teaching tool – showing and experimenting on how combinations of colors make other colors. A word to the wise – keep the food coloring in your possession – kids tend to get very carried away with it.

Now it’s time to slime. Let the kids use their hands to scoop, ball, or simply slither around in the slime. Amazingly, the more it is handled the harder it becomes. Make a ball and it holds together. Open your hand and it turns back to goopy liquid.

When the fun is done you can pour the slime down the drain or in a trash can without any environmental guilt or concern. After all, every ingredient in slime is edible!

FYI - Hands may temporarily turn the color of the slime but will come off with washing within a day.

How to Prepare for a Fulltime RV Lifestyle

I recently received this email from an RV Cooking Show viewer and thought many of you may have the same or similar questions. Have a look and see what you think. If you are a fulltimer and have some wisdom to share please do so by commenting below.

My wife and I are 35 and we want to fulltime it. We realize that we don't need much, our job has together 24/7, and we've been married for 13yrs. What advice can you give us - we are trying get prep for a three to four year exit, staring from scratch.

How exciting! Fulltiming is a special lifestyle and it sounds like it may be a good fit for you and your wife – there’s a lot of “together time”. Three to four years will give you plenty of time to prepare. Have you camped or RV’d before? If not, it may be a good idea to give it a try. You can rent an RV for not too much money and visit a close by campground. If you live near a campground or RV park (or when doing your trial run) you might spend some time chatting with other RVers – especially the fulltimers. Pick their brains – they’ll be more than delighted to share.

Here are some other tidbits for you to consider:

· Start saving as much money as you can right away. Having cash in the bank will provide you a unique freedom that’s worth every scrimp.

· Start paying down your debts with the goal of being debt-free when you begin your adventure. Again, that’s very liberating.

· Stop buying/accumulating “things” unless they have a critical purpose to your life (helps with the above two tips as well as the next one).

· Now’s the time to begin culling your “stuff”. Be ruthless in identifying what you do and do not need. Give what you don’t need to a worthy charity.

· Attend RV shows and look at as many RVs as possible. Collect brochures for the RV models that interest you. Chances are you’ll purchase a pre-owned RV that’s a few years old. Save those brochures to review when it comes time to make a purchasing decision.

· Review your income sources and talents. Will you work on the road (probably so at your ages)? What marketable skills will you bring with you? Do you need some formal education prior to hitting the road – now’s the time to look into this option.

· Begin researching what state you’ll want to be your “domicile”. Think about insurance – rig/vehicle/health, tax situations, vehicle and drivers licensing, mail – even jury duty calls. Some of the more popular RV states are Texas, Florida, Nevada, South Dakota, and Montana. Be thorough and take care to gather all the facts before choosing your state of domicile.

· Develop an exit strategy in writing. Put together a long-term plan – say your four year plan – and when you are three to six months out develop a weekly then daily plan.

RV Tailgating: The Ultimate Parking Lot Party

Football season is a great time to pack the burgers, beer, fire up the RV and head for the game… but, football season isn’t the only time for the perfect tailgate party. NASCAR races, BBQ competitions, concert festivals, and rodeo competitions are a few other season-spanning events at which to host a grand tailgate party – RV style.

Sometimes the best seats aren’t even necessarily “in” the house. These days the party begins in the parking lot with the ultimate tailgater. Delicious and easy food spreads, beverages of your choice, brewing excitement, and the joy of never having to stand in a public restroom line have inspired more and more RVers to turn their RV into the parking lot’s next party stop. Other than a weekend getaway, this is the next best way to enjoy your RV without traveling too far.

A few pointers for throwing the ultimate parking lot party, RV style:

Think Food First – All you really need is a barbecue or smoker. That is what tailgating is all about, after all. Adjust the menu to compliment the event you will be attending. Hot dogs and hamburgers can work just fine for some events or add some excitement to the menu by barbecuing ribs or steak with corn on the cob for night games or a treat before the big race. The microwave, stovetop, and fridge inside the RV make side dishes, appetizers, and proper food storage a cinch.

If you’ll be in the sun all day at an outdoor concert festival be sure to keep lots of water on hand and snacks, such as watermelon and shrimp cocktail, around the RV to stay fueled throughout the day and night.

Jazz up your spread by serving food and drinks on plates and cups in your team’s colors, style with a cowboy theme for rodeos or support your driver with his or her color and number on display at the party!

Scope Out Your Spot – The best parking lot parties happen in the best parking spots! Many professional and college football team stadiums have pre-assigned parking spaces but if you can help it, get there early and snag a spot up front to attract more high-fives from passersby and closer access to the entrance gate so you can spend as long as possible pre-partying before the big event.

Entertain In Style – Be sure to decorate your RV and surrounding area appropriately; wouldn’t want any confusion about which team you’re rooting for or which driver you support! Colorful balloons, banners, posters, flags and face paint showcase your spirit well.

Tailgate Before, During and After – The party doesn’t have to end just because the game/rodeo/concert begins! For those without tickets or those having too much fun to want to go in to the stadium, keep the party going during the event with the television (featuring the event, if possible) on and the food and drinks still plentiful. After the big show, watch highlights or postgame interviews on the TV or listen to an event recap on the radio while continuing the tailgating fun.

Leave Your Parking Area Clean – Be sure to clean up any debris, pack up all your equipment, say good-bye to tailgating neighbors, and make plans for the next event of ultimate RV parking lot partying!

Best Shopping Option for RVers

I’ll admit it up front - I’m a lousy shopper. In fact, unless it’s grocery shopping (and I love padding up and down those aisles spying and trying new and regional products) I’m pretty much a robot. I know what I’m looking for and make a beeline there and back. Good thing, too, since an RV only has so much room and a definite weight carrying limitation.

While I’m a big supporter of small independent businesses (especially restaurants), in my travels across this great big country as a roaming RVer, I’ve found it beneficial to shop national chains for certain types of products and services. If there’s a problem or I’ve picked up an incorrect size/model (in my haste to get in and out) and have moved on to another great RV locale I can search out the chain store and almost always remedy the concern. Believe it or not, this often times trumps price. Let me give you some examples:

I needed new glasses, shopped for the best bargain, made an appointment, and got new glasses. A month later the arms began to wobble, the small screws fell out and there I was, appreciating paper clip technology. Since they were still under warranty I called the store and discovered that I could get partial remedy (I’d pay shipping both ways and a small fee) if I sent them back and would have to wait four to six weeks for a replacement. Who knows where I’d be in four to six weeks and how was I supposed to see during that period of time? Moral of the story: I’ll be visiting Sears or Lens Crafters for my next eyeglasses excursion – even if they are a bit pricier.

When we got our new little Tango travel trailer we thought we needed a different size socket to torque our wheels so we stopped at Wal-Mart and picked one up. Turns out the Tango uses the same size we already had. Wal-Mart – in another state – gladly allowed us to return the socket. Moral of the story: Love ‘em or hate ‘em, Wal-Mart is just about everywhere and easy to work with. Let’s just say this isn’t their first picnic.

We always buy our truck and RV tires at America’s Tire or Discount Tire (same company). They really know what they’re doing and are competitively priced. As we travel we stop at one of their many locations for rotations/balances. If we have a problem (like the blowout we had near Detroit last summer) we simply visit a local branch and we’re in the system. They take care of us quickly and professionally. Moral of the story: Even as a traveler you can establish relationships. Doing so might even elevate you to a preferred VIP status.

Be a wise RV consumer…shop if you must; just keep in mind where you’ll be down the road in case you have to make a purchase adjustment. In the end it pays.

RV Cooking Show Recipe - Watermelon Feta Salad

Hello RVers,

You know its summer when you see watermelons – every size and shape – for sale at every grocery store and farmers market you visit. With a small RV refrigerator I’m usually a candidate for the pre-cut melons but almost always eat them up before the sweet red melon even makes it to the fridge. I recently heard that the Japanese were growing square watermelons for a better fridge fit. Check out these pictures - go figure!

Many folks think that this fruit (but some consider it a vegetable – another surprise!) is lacking nutrients but alas, the watermelon is rich in vitamins C, B6, beta carotene (vitamin A), and lycopene (in the red melons – the riper the better). It’s low in calories and sodium but high in sugar. A recent study says watermelon may be a natural Viagra – here’s the article – read it for yourself and see what you think.

A while back I came across this intriguing watermelon salad recipe and had to give it a go. I’m crazy about it and have been saving the recipe to use on an RV Cooking Show episode but shoot, if I wait too long watermelon season will be over. So, if I can use it in a show I’ll do so but just in case, I’m going to share it with you now…while the melon is good!

Don’t be discouraged by the ingredients…my husband’s in the kitchen right now gobbling it up…I better get in there before it’s gone.

Watermelon Feta Salad

Cubed seedless watermelon
Crumbled feta cheese
Toasted pine nuts
Roughly chopped flat leaf parsley
Fresh ground black pepper

3 parts canola oil to 1 part fresh squeezed lemon juice (maybe a little less oil)

Mix oil and lemon juice to make dressing.

Toss watermelon, feta, pine nuts, parsley, and pepper in a large bowl. Add dressing and toss well.

Serve and enjoy!

RV Tire Safety

Do you remember that iconic tire commercial that extolled the virtues of their product – “because you’ve got a lot riding on your tires” – with an image of the cutest baby sitting in a tire? It was true then and it’s true now – your tires are literally where the rubber meets the road. Making a good purchasing decision and maintaining your RV’s tires can mean the difference between a pleasant trip and an unpleasant, unplanned stop. Just ask my full-time RVing friends traveling from California to Massachusetts - three 5th wheel tire blow-outs in a row - yikes!! In this article we’ll discuss the specifics of trailer tires but several points pertain to motorhomes as well.

Purchasing Trailer Tires

Look for special trailer tires – denoted with an ST in front of the string of numbers on the sidewall. These are designed with trailering in mind – they have stiffer sidewalls than a P (passenger) or LT (light truck) tire, are more flexible cornering and backing, and are designed for long duty cycles to name a few differentiating factors.

When choosing trailer tires you’ll need to know the weight of your fully-loaded trailer. It’s a great idea to actually weigh it – the manufacturer’s numbers are almost always low. This information is critical in determining the load range (weight capacity of each tire) you’ll need. Trailer tire load ranges are identified by a letter – usually B-D – the higher the letter the more the tire can carry. Remember that your tires work in conjunction with the axles and other suspension components – a high load range tire doesn’t mean you can exceed the axle ratings, etc.

Believe it or not, trailer tires are designed to last 3-5 years or 5,000-12,000 miles and are not designed to wear out. After a mere 3 years – traveling or garaged – approximately one-third of your tire’s strength is gone. Without question, it’s extremely difficult to purchase new tires when yours look perfectly good but it’s essential to your safety. Using sidewall data you can see how “fresh” your tires are. Look for a four digit number following the DOT serial number – typically on the back of the tire. The date code will be stamped rather than molded in an oval shape. The first two digits are the week of the year in which the tire was manufactured (01 thru 52) followed by the final two digits denoting the year it was manufactured. A tire stamped "1208" was manufactured in the 12th week of 2008.

Safe Travels

The number one factor in tire failure is improper inflation. It’s recommended to inflate your tires to the maximum PSI stamped on the sidewall. The trick however, is to be aware of how the elements affect tire pressure. Higher elevations increase tire pressure as does warmer temperatures. When traveling you should check your tires prior to setting out on the trip and each day before hitting the road – always when they are “cold” and that means before moving the vehicle. Take this opportunity to do a visual inspection, keeping an eye out for unusual tire wear, bulging, cracking, etc.

Another interesting and important fact is that ST tires have a maximum speed rating of 65 MPH. Drive faster than that and risk tire failure. That’s because as heat builds up the tire's structure starts to disintegrate and weaken. The load carrying capacity gradually decreases as the heat and stresses generated by higher speed increases. Plan enough time to get there without a tire mishap.

Bring and use tire covers for stays longer than a weekend – UV rays accelerate tire disintegration. Use only soap and water to clean your tires. Never – and I mean never – use a product with petroleum distillates on your tires. Again, this will degrade your tires.

Before leaving on your trip check your spare (when checking your other tires) and properly inflate it. Make sure you have all the pieces of your jack system and know how to use it.

Precious Cargo

Do yourself and those you share the road with a favor – make your tires your number one priority. Be slow, be prepared, be safe. The simple fact is that each one of us does have a lot riding on our tires. See you on the road…hopefully not on the side of the road.

Sensational Santa Cruz (and a secret RV park)

We’ve spent plenty of time in San Luis Obispo/Morro Bay and the San Francisco Bay areas of the California coast but simply hadn’t made it to Santa Cruz. In fact, last summer we tried to stay in one of a few state parks in the area and there was no room at the, well...parks.

This year we planned ahead and did some research which led us to a 12 site, hidden gem of an RV park – the Santa Cruz North Port District (or North Harbor) RV park. All 12 sites offer w/s/e, RVs must be self contained, and tents are not permitted. While not cheap (okay, maybe by CA standards it is) at $40/night it is worth every penny. The sites backup to a treed hill and are directly across from the boat moorage.

A breezy day partners with the sailboats to make the most soothing music. Grab a beverage of your choice, have a seat on one of the many benches and soak it all in. Check out this video and imagine yourself there:

A short half mile walk along the harbor (on either side) delivers you to beautiful beaches with crashing waves and volleyball courts, a jetty and lighthouse, a tony neighborhood perfect for an early evening stroll, and restaurants galore. On Wednesday nights from April to October Santa Cruz hosts sailboat “races” just outside the harbor mouth. You can sit on the beach and watch, take part on a boat cruise or do like we did and find a table on the upstairs outdoor patio at the Crow’s Nest and enjoy a little happy hour (runs all night on Wednesday’s) with your sailboat racing. Terrific!!

A trip into this town is hip! We chose to venture in on a Wednesday (yeah, a very fun-filled day that Wednesday was!!) so we could visit the Farmers Market. It was the BEST market I think I’ve ever been to…anywhere. The produce was displayed beautifully, the variety outstanding (even for the bounty of summer), and the multitude of ethnic food stands tempted even a full shopper.

But the very best thing about the Santa Cruz Farmers Market was the beet lemon sorbet at Scream Sorbet. Yep, I said beet lemon and it was a taste sensation enough to make a girl swoon. Noah was offering tastes of the 6 varieties on the scooping menu that day and they were all fabulous but when I saw the amazing color of this sorbet I was sold. Oh! My! Gosh! Scream scoops at several Bay Area markets so if you happen to have the chance to visit them I highly recommend it! Check out the markets they part icipate in, the current flavors they’re scooping, and where they are sourcing the ingredients from…it just might be the organic fruit stand right next to them at the market.

Capitola – a bit down the road – is a surfer’s paradise and offers a little “tourist village” with shops, restaurants, and beachfront benches. Looking for some handmade boutique soap, bath scrub, body butter or lip balm? Don’t miss the great products and really nice folks at Lavroma. Along the village circle is Pizza-My-Heart…the perpetually long line is justified – after you get your slice (or 2 if you know what's good for ya) head to a beachside bench and enjoy. A bit up the hill is Gayle’s Bakery known for their yummy chocolate éclairs and other such baked delights. We sat outside soaking up the sun with our coffee and treats – paradise!

Some lucky soul was scheduled in our site and, well, we had to move along anyway. Even though we just left I can’t wait to go back…and that’s saying something coming from a jaded 9+year full-timer like me.

But before you sign on the dotted line it's critical that you, in partnership with your sales person or their techs, conduct a PDI - pre-delivery inspection.

Typically the dealer will do a PDI on your RV before you arrive to pick it up but you know how it is...no one cares about your camper like you do. You must take the time to do a thorough walk-through - your own PDI. Ask any RV owner - it's important to make sure everything is in full and complete working order before you sign the papers and take delivery of your “new baby”.

Your PDI will be lengthy and may take more time than the dealer will want to spend but again, it’s up to you to make sure everything is in tip-top shape. It’s never a bad idea to forward your checklist to the dealer in advance so they know what you will be looking for. This is advantageous to both parties.

Arrive equipped with that checklist, a pen and pad of paper, and a keen eye for detail. You should present a list of the items you’ve noted as "not acceptable" to your sales person and require the dealer to repair any items prior to finalizing the purchase if at all possible. If the noted items cannot be fixed that day get an agreement of when and exactly what will be attended to in writing.

You’ll find that every area of the RV needs to be looked at. Some (but certainly not all) items for your consideration:

Outside:

Inspect the outside of the coach including all doors, locks, latches, and slide outs. Look for flaws in the siding such as delamination. The caulk around windows, doors, edges, etc. should be fresh and without breaks.
If necessary, be sure the technician explains – and you fully understand – how to operate the connections – water, sewer, cable, telephone, etc.
Understand how the propane tanks work and check for proper ventilation. Make sure a leak test has been performed.
Inspect the roof – this is vital – for proper caulking around the edges and all rooftop components. Look for bubbles that indicate loose rubber roofing.
Look closely at the tires – are they all the same? Check the tire pressure and tread wear. Make sure the luguts are torqued to the proper specs.

Inside:

Open every closet, cupboard and drawer, make sure the finish is acceptable (not marred or gouged), inspect the furniture and fabric, open and close the window shades and windows.
Look for any spotting or staining on the ceiling or walls (even inside cupboards and closets) that might indicate a leak.

Systems:

Operate and inspect all systems including the A/C, furnace, slide outs, TV antenna, stove and oven, etc.
If your new RV is motorized you’ll want to fully inspect the cockpit, start and run the engine, check the brakes, etc.

If you are purchasing from a private owner it’s still a good idea to complete a PDI. What’s that saying? Buyer beware. Even if you find a few flaws and decide to go ahead with the sale you’ll go into it with your eyes wide open.

If this is your first RV purchase this may seem over the top. If it’s not your first, you know what I mean. Your diligence will pay off in the end – it always does. Making sure your “new” RV is in tip-top shape, a thorough PDI will help you avoid pesky – and potentially expensive – problems down the road.

RVing is one of the greatest ways to vacation...choose your camper wisely and inspect it well. It will provide you fabulous experiences and lifelong memories for years to come.

Training Cats and Kittens for a Walk in the RV Park

“Ginger” is a 9-year-old green-eyed calico cat who wandered onto her owner Jim’s farm in Ohio as a kitten. When viewed from the backside it appears as though she has on caramel colored shorts because the color is evenly distributed on either side of her tail.

Jim is retired and visits Florida in his motorhome every winter to escape the cold up north. In April and May Ginger visits Florida with Jim.

Ginger was a lucky kitten to have found Jim – he has provided her with a comfortable home and a good life over the last several years. Jim and Ginger take long walks in Whispering Palms Resort. She wears a blue harness and Jim keeps her on a leash. Jim always wears a smile on their daily walks.

Using a comfortable harness and leash to take your pet cat for a walk is a great tip when traveling in your RV. Your cat can get fresh air every day and can enjoy the great RV parks with you. To train your cat to walk on a leash first get a harness, the kind with two rings, not the figure 8 type – the figure 8 type is easy for a cat to slip out of. Get a six foot leash as well.

Put the harness on your cat daily, gradually increasing the time your cat wears it. At first most cats will just fall over on their side when you put the harness on, but once they get used to it they will stand up again. After your cat is used to the harness attach the leash and allow them to wander about your home dragging the leash. Watch carefully to avoid hang-ups, though.

Finally, take your cat outside with the harness and leash on, gradually increasing the time outside. Stay away from dogs, they scare cats. Take a few steps, when your cat lags behind give a gentle tug on the leash and some words of encouragement. Keep a good grip on the leash as some cats will start running for fun. If you see a lady running across a meadow behind a big Maine Coon cat on a leash it’s probably me!

Here is a recipe this lady makes, made with the parts of a chicken that are not often used, but are well loved by cats on farms (and RV parks) everywhere:

Chicken Giblets for Cats and Kittens Dr. Amy Cousino, DMV

Chicken giblets (from a roasting chicken)
Chicken broth to cover, homemade, without onion, garlic or seasonings
Celery, ¼ of the stalks, chopped

Place the giblets including the gizzard, liver, neck, and heart in a small saucepan.

Cover with the broth, add the celery. Bring to a boil, immediately turn to simmer and cover, cooking very slowly for 30 minutes.

Take off heat and leave covered for one hour. Remove giblets, reserving the broth and chop fine before serving. Add broth to moisten the giblets.

Remove the meat from the neck, discarding the bones and mix with the other giblets.

Feeding Guide: adult cat 4 T, twice daily; kitten 1-2 T, 3-4 times daily (T=Tablespoon)

9 Years as a Full-Time RV er - Early RVing Lessons

I can remember my last day at my corporate office like it was yesterday. What a feeling, we we’re going to be full-time RV ers and the adventure was beginning. It took us two months of planning, yard sales, tying up loose ends, etc. but the day finally arrived. We picked up our first RV – a “pre-owned” Trailmanor 3326 – in Surprise, AZ and headed up the road. My husband drove and never having been RV ers the towing sensation was, let's just say odd. We found our park in Cottonwood, somehow got parked, leveled, set up then went out to dinner. Many new and valuable lessons were to follow in the first month (and on and on) and I’m tickled to share some of the first of them with you:

* Even though it was May, it was HOT in Arizona. We turned on the fridge the evening we arrived and the next day we headed to the store for our first batch of groceries. Turns out the electric hookups at the park were not adequate for the hot weather RV load and, as can be expected, an overload tripped our row’s breaker. We got home with plenty to feast upon – even ice cream! – to a warm fridge. Had to eat all of the ice cream right then and there and renamed the town “Hottenwood” as we packed up to leave.

* We had the wherewithal to head to cooler climes – Flagstaff – and a beautiful shaded site. It was there that we learned two absolute RV life lessons. At the end of my rope, unable to get my manual lighting water heater to light, the park manager pulled up in his golf cart and gently helped me understand that I was attempting to light the wrong spot. He gave me a quick Water Heater 101 and I’ve never forgotten him or his lovely park – Greer’s Pine Shadows.

* It was also there that we realized what special, friendly, and unique people RV er’s are. Enter our neighbor Lucy. She had recently retired and had always dreamed of learning to tap dance. She now had the time to follow this dream and she was pretty good. How do I know? She kept a large piece of plywood under her camper and would pull it out, strap on her tap shoes, and give the neighbors a performance upon request.

* And then there’s this…our dream was (and still is) to follow the sun and travel only warm and sunny locales. That’s why we gave away all – yep, go figure, all – of our warm clothes including our sweatshirts and pants. In theory, it’s a great plan. In reality, thank goodness Walmart still had a selection of sweats.

* We found our way to Arizona’s Canyon de Chelly (pronounced Chay) National Monument and parked in the last site available – a bright and sunny (read: hot as the dickens) site, I might add. The next morning, excited to be on this adventure, we prepared the RV for a day away. This included making sure the windows were closed and the awning was open. White House Ruins were spectacular as promised. In the campground, as we approached our new RV, we oohed and ahhed at the thing of beauty. But a second, closer look showed something not quite right. Not right indeed – a strong wind wrapped the awning atop our camper – popping one arm right off the RV and bending the other backwards to help the blasted thing achieve “pretzel” status. We bent it back and made it usable again but, geez!!

* About two weeks into the life we couldn’t shake the feeling that it was nearly time to get back “home” and “back to work”. You know what I mean? The two week vacation time was nearly up but alas, we were home and there was no job or place to go back to...we'd really done it!

And as it does, life zoomed by and poof, nine years have passed. We’ve been a zillion places (but there are a zillion more to visit), made many great friends along the way – some younger than us – most older – all amazing, pursued our passions, are thrilled and delighted to still be living and loving this life, and are honored that you’ve allowed us – in the form of this blog and the RV Cooking Show – to be part of your RVing life. Thank you.

Some RV lessons learned, plenty more ahead, I’m sure; we’ll continue our life in the box on wheels and look for you out on the RV road!

Hold your hand up if you or someone you care about has not, I repeat, has not been affected by today’s economy. Chances are you didn’t raise your hand. Neither did I. And while recent news reports tell us that our economic troubles may be waning they also tell us that more than 36.2 million Americans currently live in food insecure households. These are often hard-working adults, children and seniors who simply cannot make ends meet and are forced to go without food for several meals or even days. Most of us simply have no idea – I know I go to bed full every night. Across the country local food banks are seeing a 20%-40% increase in demand and food donations are dangerously lean - in some cases down 50+%. It’s time to do something about America’s hunger problem.

Maybe you’ve volunteered at a food bank or maybe not. Maybe you participated in the “Stamp Out Hunger” postal service food drive or maybe not. Maybe your own household is food insecure or maybe not. A lot of maybes but one thing I bet is true – you want to help if you can. The RV Cooking Show is delighted to give you a no-cost opportunity to help feed a child, a grandma or grandpa, a hungry American.
